Edible Cookie Dough for One ~ Easy Recipe That’s Safe to Enjoy

Everybody loves cookie dough! Making edible cookie dough for one means you won’t overindulge. When you make it yourself and don’t buy it premade, you can ensure it’s palm oil free as well.

That sweet, gooey, little chunk of goodness, filled with chocolate chips is like a little slice of heaven. However, typical cookie dough has some serious drawbacks – namely the fact that it is made with eggs.

If you eat raw eggs that contain certain bacteria (that are killed during cooking) you can get salmonella. That’s a form of food poisoning that will ensure you have one of the worst days of your life.

So what to do? Cookie dough is so tempting! This recipe is egg-free and ready for you to eat as is, freeze in little bits for later, mix into a shake, or stir into ice cream. Best of all, it’s super easy to make.

Now, to protect yourself from any bacteria that may be lurking in your raw flour, put it in a microwave-safe container and microwave it for 15 seconds at a time, checking the temperature in between. Once it reaches 160 degrees F, it is safe to eat.

It is very important to take the extra time to eliminate the possibility the flour is contaminated. We often don’t think of flour being raw but bacteria can be present. Cooking and baking it eliminates potential contaminants.

This recipe for edible cookie dough is a single serving and only calls for 6 tablespoons of flour which is just over a ⅓ of a cup. Be sure to not overcook it. You can also double the flour to make a larger batch.

Edible Cookie Dough Ingredients

  • 6 tablespoons all-purpose flour
  • 2 tablespoons butter, unsalted, room temperature
  • 2 tablespoons brown sugar
  • 1 tablespoon white sugar also called granulated sugar
  • ½ teaspoon pure vanilla extract
  • 1 tablespoon milk – To make this palm oil free, be sure the milk doesn’t contain Vitamin A Palmitate. I’ve found organic whole milk to be a good choice.
  • Pinch of sea salt
  • 3 tablespoons mini or regular chocolate chips – Optional

If you don’t want to make chocolate chip cookie dough, simply omit the chocolate chips.

How to Make Edible Cookie Dough for One

  1. Set the flour in a microwave-safe bowl and set in the microwave for 30 seconds. Test it with a food thermometer. Microwave it in 15 second intervals until the flour reaches 160 degrees F. Then it’s safe to eat raw.
  2. In a small bowl, cream together the granulated sugar and brown sugar with the butter.
  3. Stir in the milk and vanilla extract.
  4. Add the flour and salt. Mix until well combined. If the dough is too wet, you can add a little more flour.
  5. Add the chocolate chips and mix well.
  6. Use a teaspoon or melon scoop to make uniform cookie dough balls. Or eat it right out of the bowl with a spoon. Store leftovers in the refrigerator. You can also freeze it into small cookie dough balls to enjoy another time.
