This is the best Mediterranean dip. It uses easy-to-find ingredients you can find year round. Make it with or without feta cheese and olives. Make and serve, or prepare in advance. Serve cold.

Ingredients
7 - 8tomatoes or container of cherry tomatoes chopped
Red onion chopped
1cupEnglish cucumber chopped
7 - 9chopped scallions - greens and white
6ozfeta cheese
Optional: ½ cup sliced or halved olives
Dressing
3tablespoonsolive oil
Juice from ½ lemon
½teaspoondried basil
¼teaspoongarlic powder
¼teaspoonsalt
¼teaspoonblack pepper
⅛teaspoondried dill
⅛teaspoondried oregano leaves
Instructions
Chop tomatoes, cucumber, red onion, and scallions into small pieces, and put in large bowl. Combine.
In small bowl, combine olive oil, lemon juice, and spices.
Pour dressing onto mixture and combine.
Optional: Add feta cheese and/or olives and combine.
Serve, and then refrigerate leftovers.
Notes
You can make and serve immediately, or make ahead and store. The flavors will intensify when flavors have a chance to meld. Store in airtight container or covered container. Do not freeze.
