This is an easy banana muffin recipe that uses ripe bananas. It's versatile too. You can add in chocolate chips. Or make banana muffins healthy by adding walnuts or using almond flour. They are delicious for breakfast or anytime!mix by hand as well.
2cupsall purpose flour can substitute almond flour or other gluten free flour
1teaspoonbaking powder
1teaspoonbaking soda
¼teaspoonsalt
½cupchocolate chipsoptional
½cupwalnutsoptional
Wet ingredients
4very ripe bananas
2eggs
½cupbutter
½cupbrown sugar or granulated sugar
2tablespoonsmilk
1teaspoonpure vanilla extract
Instructions
Soften butter on the counter in advance or use microwave.
Preheat oven to bake at 350 degrees F (175 degrees C)
Prepare muffin tin with paper liners or grease the cups. Or you can use a silicone muffin pan.
In a medium size bowl, mix the dry ingredients (flour, baking powder, baking soda, and salt). Add in walnuts and/or chocolate chips if using.
Separately, in a large bowl, mash the bananas. Whisk in eggs. Add in softened butter.
Then add in the brown sugar, milk, and vanilla extract.
Gently pour the dry ingredients into the wet ingredients and mix thoroughly with hand mixer. Add an additional tablespoon of milk if the batter is too thick.
Fill each of the muffin cups ¾ of the way. They will rise.
Set in oven. Set timer for 20 minutes.
Check for doneness by inserting a toothpick or fork into the center to ensure they are baked through. Add 2 minutes if necessary.
