Materials
Cauliflower head
High-performance food processor or blender
Instructions
Wash cauliflower.
Cut off any brown spots.
Break off or cut the green parts.
Cut or break apart the cauliflower into florets.
Chop the main cauliflower stem into smaller parts so it blends better.
Put small cauliflower florets and stems on the bottom of the food processor or blender. Put the larger pieces on top. Fill it halfway.
Turn the food processor on¼ low or medium speed. Be sure all the pieces are chopped. Pour rice cauliflower into a bowl or saucepan.
Fill the blender with the rest of the cauliflower florets and stems. Pulse until chopped.
Pour cauliflower rice into bowl to refrigerate or in a pan to cook.
Notes
Don't put all the florets into the food processor at once. Fill it a quarter to one half full so you don't burn out the motor.Use a box grater if you don't have a blender or food processor.Put smaller florets and pieces on the bottom and larger pieces on the top. Store cauliflower rice in the refrigerator for up to three days. Freeze it raw or cooked up to three months.
